Mohari, also known as black mustard seeds or “rai” in Hindi, are the small, round seeds harvested from the mustard plant, primarily Brassica nigra. These seeds are typically 1–2 millimeters in diameter and range in color from dark brown to black26. Mohari is a staple spice in Indian cuisine, valued for its pungent, spicy flavor and its ability to enhance the taste of a wide variety of dishes. The black mustard plant is an annual that grows up to 1.2 meters tall, producing yellow flowers and long seed pods containing the characteristic black seeds. The seeds themselves are nearly odorless when dry but develop a sharp, spicy, and slightly bitter flavor when chewed or ground, due to the release of volatile oils and enzymes. In Indian cooking, Mohari is often fried in oil or ghee until the seeds pop, releasing a nutty aroma and flavor that forms the base for many curries, dals, pickles, and vegetable dishes. Mustard plants grow well in temperate and tropical regions, with India being one of the major producers. Black mustard seeds are more challenging to harvest than yellow or brown varieties, as they require manual collection due to their small size and the nature of their seed pods. The crop matures within 40–100 days after sowing, and the seeds are typically harvested when the pods are mature but still closed to prevent shattering.
