Aawla Supari, also known as Amla Supari or Indian Gooseberry Supari, is a traditional Indian mouth freshener and digestive made from the nutrient-rich fruit, amla (Indian gooseberry). The preparation of Aawla Supari is a meticulous process that begins with harvesting fresh, ripe amla fruits, typically available in winter. The fruits are thoroughly cleaned and washed to remove any impurities, then cut into evenly sized pieces to ensure uniform drying and flavor distribution To balance the naturally sharp tartness of amla, the pieces are often soaked in salt water or lime juice for several hours before being sun-dried. The drying process is crucial and can take anywhere from two to ten days, depending on the method and weather conditions. Sun-drying ensures that all moisture is removed, giving the final product a hard, dry texture and a long shelf life—sometimes lasting several months to years if stored in airtight containers. Once dried, the amla pieces are mixed with a blend of spices and natural flavor enhancers such as black salt, rock salt, asafoetida (hing), fennel seeds, cardamom, and sometimes sugar or jaggery. This spice mixture not only enhances the taste but also adds digestive benefits. The seasoned amla is then left to cure, allowing the flavors to meld and mature, resulting in a tangy, spicy, and slightly salty treat.
